HOT CHICKEN SALAD Ingredients: 2 cups diced cooked chicken breast 1 cup diced or sliced celery 1 can cream chicken soup 2 chopped hard boiled eggs 1 cup shredded cheddar cheese, reserving ¼ cup for topping 2/3 cup Miracle Whip or mayonnaise 1 cup Chow Mein noodles 1-2 Tablespoons of minced onion ½ cup slivered almonds ½ cup sliced fresh mushrooms (optional) 1 teaspoon lemon juice 1 can sliced water chestnuts, drained MIX ALL INGREDIENTS. PLACE IN GREASED CASSEROLE DISH. SPRINKLE WITH ¼ CUP CHEDDAR CHEESE. BAKE AT 350 DEGREES FOR ABOUT 30 MINUTES. SERVES 8. RECIPE CAN BE DOUBLED.
